INGREDIENTS

Per 100g lamb:
grape leaves 80g
rice 5g
onions 20g
matsun 50g
garlic 2g
salt, pepper, fresh thyme, mint,
cilantro, basil, marjoram to taste

METHOD

Every time a large family sits for a meal, the dolma is sure to be on the table. It is usually served with matsun and crushed garlic, but is also often used with a mushroom-walnut or cherry sauce. Here we present the favorite traditional dolma recipe.

Cut the soft part of lamb meat into small pieces and pass them through a meat grinder. Take the minced meat and add some half-boiled rice, finely chopped onions, cilantro, mint, basil, thyme, marjoram, salt, pepper, and mix everything thoroughly. Put some fresh grape leaves into boiling water for 2-3 minutes, but remember not to boil them! Remove the stalks. Put some mincemeat in the center of each grape leaf and wrap them into small “sachets”. Put some grape leaves and the chopped bones left over from deboning the lamb to the bottom of the pan. Place the prepared dolma on top; pour some hot water so that the top row is almost completely submerged. Close the lid and keep on low heat until the dish is ready.
