Khashlama is a very old traditional meat recipe that is part of Armenian culture. It must only be prepared by a man because the real khashlama that is cooked on an open flame marks a very important moment in the life of a family – the birth of a son. You should cut the lamb into small pieces without removing the bones, wash them, and put them in a pan in layers, alternating meat with sliced vegetables. Sprinkle each layer with black pepper and salt. Then pour cold water over it, close the pan with a lid and cook on low heat until tender. Serve sprinkled with chopped parsley. Khashlama can be of the summer kind – with an abundance of seasonal vegetables - and of the winter kind, with less vegetables, but cooked in beer or wine.
